Discover the Process of Olive Oil Making through the Ages
The know-how of 4 generations combined with new olive growing technologies allows the Callas Mill to process 300 tons of olives in a new workshop perfectly integrated into its environment.
The Moulin de Callas produces a unique oil, carefully selected by the master miller and awarded many times at the Concours Général Agricole de Paris, as well as a wide range of artisanal products.
The land of choice for the "Ribier", a small round olive that is harvested in November, Callas has a very ancient olivegrowing past. At the beginning of the century, the territory of Callas was covered with olive forests. A particularly resistant tree, it has survived the centuries and the successive frosts that have hit this corner of Provence.
The old communal mill:
A former hydraulic mill for the production of oil, founded in the 18th century, it was in operation until the great frost of 1956. You will learn how the olives are picked, how the
olive paste is prepared and how it is pressed to extract the oil.

You can compare the methods of the old communal mill with this "new" mill which benefits from the latest equipment. We promise you that only the process has evolved! The authentic taste of Provence olive oil has withstood the test of time.

- Guided tour of the old communal mill in Callas: 45 minutes
- Olive oil tasting at the Bérenguier Mill in Callas: 30 minutes + 15 minutes in the shop
- Wine tasting at the Domaine du Plan in Callas: 30 to 45 minutes + 15 minutes possible in the shop
